Ten years ago I was so fortunate to receive a one-year scholarship in Spain. It let me experience this amazing country through its gastronomy and had me cooking alongside the great Paco Roncero. That year had a great impact on the rest of my life, and I’m deeply grateful for it, and I’ve been in love with this country ever since. In march 2018 we visited my father’s house in Alicante, at that time when the artichokes where everywhere, and we cooked a whole bunch of them with garlic and lemons that we picked ourselves. Where we come from, artichokes are a delicassy and we never get to stuff our stomachs so full of them that we have to turn another one down. That day was an absolutely wonderful day.
